Egg Rolls with Sweet and Sour Sauce

Hey all! Remember this blog? It's time to get this thing going again:)

I made egg rolls tonight for the first time, and they were SOOOOO good! I've always wanted to find a good egg roll recipe, but the only recipes I've found call for weird ingredients, like fish sauce or oyster stuff. Ick. This is my mother in law's recipe, with some modifications from moi, and it is really a keeper!


Egg Rolls

1/2 lb ground sausage (we like the hot flavor)
1/2 head of cabbage, shredded*
1 cup carrots, shredded
3 green onions, diced
1 Tbsp soy sauce
2 Tbsp corn starch
1-2 Tbsp water

Egg roll wrappers

*You could use a bag of coleslaw instead*


Brown sausage in frying pan. Add remaining ingredients and stir fry, until veggies are tender.

Place 1/4 cup filling just below the center of egg roll wrapper.Roll up per instructions on wrapper.

Fry egg rolls until golden brown.

You can also bake them at 400 for about 15-18 minutes, or until golden brown.

The texture of the wrappers is definitely better when it's fried, but obviously not as healthy.


Sweet and Sour sauce:
3/4 c white sugar
1/3 c white vinegar
2/3 c water
1/4 c soy sauce
1 Tbsp ketchup
2 Tbsp corn starch

Combine all ingredients in a saucepan and bring to a boil. Continue to cook until thickened.
