Remember this blog? It's time to get this thing going again:)<br /><br />I made egg rolls tonight for the first time, and they were SOOOOO good! I've always wanted to find a good egg roll recipe, but the only recipes I've found call for weird ingredients, like fish sauce or oyster stuff. Ick. This is my mother in law's recipe, with some modifications from moi, and it is really a keeper!<br /><br /><br />Egg Rolls<br /><br />1/2 lb ground sausage (we like the hot flavor)<br />1/2 head of cabbage, shredded*<br />1 cup carrots, shredded <br />3 green onions, diced<br />1 Tbsp soy sauce<br />2 Tbsp corn starch<br />1-2 Tbsp water<br /><br />Egg roll wrappers<br /><br />*You could use a bag of coleslaw instead*<br /><br /><br />Brown sausage in frying pan. Add remaining ingredients and stir fry, until veggies are tender.<br /><br />Place 1/4 cup filling just below the center of egg roll wrapper.Roll up per instructions on wrapper.<br /><br />Fry egg rolls until golden brown.<br /><br />You can also bake them at 400 for about 15-18 minutes, or until golden brown.<br /><br />The texture of the wrappers is definitely better when it's fried, but obviously not as healthy.<br /><br /><br />Sweet and Sour sauce:<br />3/4 c white sugar<br />1/3 c white vinegar<br />2/3 c water<br />1/4 c soy sauce<br />1 Tbsp ketchup<br />2 Tbsp corn starch<br /><br />Combine all ingredients in a saucepan and bring to a boil. So I skipped the pumpkin pie spice and just seasoned to taste with the much cheaper spices that I already had on hand. Turned out perfect!</p><br /><p></p><br /><p>Mix dry ingredients in a medium saucepan. Add juices and bring to a boil. Boil one minute, stirring constantly. Off heat, add butter and stir until combined. This stores great in the fridge! Trapper LOVES Mexican, so I'm always looking for a new things to do, and we really liked this one.<br /><br /><br /><ul><br /><li>Nonstick cooking spray</li><br /><li>1 tbsp. extra virgin olive oil (or regular olive oil)</li><br /><li>2 cups chopped yellow onions</li><br /><li>2 packages (6 ounces each) refrigerated oven-roasted diced chicken, Tyson (I just used a 13 ounce can of already cooked and chopped chicken from Costco)</li><br /><li>1 can (4 ounce) diced green chiles</li><br /><li>2 jars (16 ounces each) medium-hot green salsa (I accidentally bought green sauce, so I ended up using 1/4 cup of regular salsa, cause that's all i had and a few teaspoons of the green sauce......so even if you don't have the right stuff, it still tastes good.)</li><br /><li>4 cups tortilla chips, crumbled</li><br /><li>2 cups grated 4 cheese mexican cheese blend</li><br /><li>4 to 6 eggs</li><br /><li>2 tbsp butter, cut into 4 to 6 pieces</li><br /><li>1/4 c. chopped fresh cilantro</li><br /><li>1 container (8 ounce) sour cream</li><br /><li>2 tsp. lime juice, ReaLime or just buy a fresh lime from produce and squeeze all the juice out of it </li></ul><br /><p>DIRECTIONS:<br />1. I find some of the greatest little recipes in their magazines or on their website. This is one that I use if I have tortillas or chopped-up chicken from leftovers. It takes only 30 minutes.<br /><br /><ul><li>1/2 c. salsa</li><li>2 tbsp. miracle whip dressing</li><li>1/2 tsp. chili powder</li><li>8 flour tortillas (6inch)</li><li>3 cooked small boneless skinless chicken breast haves, sliced (OR like me, I just use canned chicken.)</li><li>1 c. mexican style shredded four cheese (or any kind of cheese you like)</li></ul><p>Combine salsa, dressing and chili power; spread evenly onto bottom halves of tortillas. Top with chicken and cheese. </p><p>Fold tortillas in half to enclse filling.</p><p>Cook in skillet (or griddle) sprayed with cooking spray on medium heat 4 to 5 minutes on each side or until both sides are golden brown and cheese is melted. Cut each quesadilla into 3 wedges to serve. Throw it in the crock pot with some pork and 8 hours later, you have the most delicous pork you'll ever have! It's great on rolls, in tacos or burritos, or on a yummy salad.<br /><br />Now, about the Cilantro Lime Rice, I swear to you I could eat this every day for the rest of my life. It is THAT yummy! We've eaten it plain for lunch or as a side with a variety of dinners, but it wasn't until I paired it with the pork that I realized how absolutely amazing it truly could be!<br /><br />Try this! I KNOW you'll like it!<br /><br /><strong><span style="font-size:180%;">Sweet Pork</span> </strong>Brittany Pickett recipe<br /><br />2c brown sugar<br />2c picante sauce (this is just a kind of salsa)<br />3 lb pork roast<br /><br />Place roast in crockpot. Mix salsa and brown sugar and pour over roast. Cook on low all day (about 8 hours). You will know when the pork is done- it literally falls apart.<br /><br />*Note: I didn't want to make 3 lbs worth, so I bought bone-in pork chops instead and used enough to make 1.5 lbs so that I could halve the recipe(I think you could find 1.5lb roasts, too). It worked perfectly!<br /><br /><br /><strong><span style="font-size:180%;">Cilantro Lime Rice</span></strong><br /><br />1/4 sweet yellow onion, diced<br />1-2 cloves of garlic, minced<br />1 c white rice<br />2 c water<br />1 tsp chicken bouillon granules<br />1 large handful cilantro, chopped<br />juice and zest of 1 lime<br /><br />Saute onions in heated oil. Add warm water and oil and beat until smooth. Add more flour till dough pulls away from sides of the bowl. Mix for 5 min and let stand for about 10 min.</div><br /><div></div><div>Roll out dough into large rectangle and top with cheese and whatever pizza toppings you like. Do not put sauce on the dough or it will be super hard to roll up! Roll up like you would if you were making cinnamon rolls then cut into rolls. Put on greased pan and let raise 10-20 min then bake at 350 for about 10-15 min. (Do not drain). Stir in chicken and chili powder and cook till chicken and bacon are all the way cooked. Add brown sugar and cook till sugar dissolves and sauce begins to thicken, about 4-5 minutes. Add water if needed to thin the sauce.
